Mince Pie Baked Oats
I love Christmas and every year I make a big batch of mince pies with my mum as an annual tradition. As this year is a little different, we haven’t been able to make them together so I thought I would have a go at making my own mincemeat too. I wanted a recipe that wasn’t laden with sugar but still packed in the flavour. I had some mincemeat leftover after I made the mince pies so had the idea to add it onto my porridge and then this mince pie baked oats recipe was born. I hope you love it as much as I do.
Not only is it Christmas in a bowl, it also support hormone balancing and keeping those gut bugs happy and in balance too. You can also use the mincemeat recipe to make your own mince pies or mince pie porridge.
Ingredients
For the Mincemeat:
120g of raisins or mixed dried berries
3 medjool dates
1/2 an orange, juice & zest
1tsp of coconut oil
1tsp of cinnamon
1/2tsp of ginger
A few grates of nutmeg
Enough water to cover the saucepan
For the Baked Oats:
80g Oats
2tbsp of Stewed apple
2 tsp of ground flax/pumpkin/sesame or sunflower seeds
1/2 tsp of Baking Powder
1 tbsp of Chia seeds
1/2 tsp of Cinnamon
2 tbsp of Mincemeat
200ml of your chosen milk
1 tsp of Maca (optional)
Method
Preheat your oven to 180c degree
To make the mincemeat, in a saucepan add in the dried fruit, coconut oil, spices. Chop the dates into small pieces and add to the pan.
Grate and juice your orange then add to the saucepan, along with enough water to just cover the content of the pan.
Turn the hob onto a medium heat and cover. Leave to simmer until all the water has been absorbed and evaporated (usually 15-20 minutes, depending on how much water was added). Once done, remove from the hob.
Combine all the baked oats ingredients, including the 2tbsp of the completed mincemeat (store the rest of the mincemeat in the fridge or use to make your own mince pies).
Transfer to ovenproof dish
Bake for 25-30mins
Add the toppings of your choice. I love it with almond yoghurt, stewed apple and some more ground seeds
Store the leftovers in the fridge for the next day
